We adore these cuts, commonly referred to as Korean Short Ribs, for their versatility—they allow for either a speedy dinner preparation or a more elaborate culinary endeavor. By cross-cutting the short rib section, we present thin strips of steak intertwined with decadent fat and marrow-rich bones that yield a tender product when cooked in minutes instead of hours.

For classic Kalbi (Galbi), opt for a marinade based on soy sauce and brown sugar. Given sufficient time, this cut readily absorbs flavors, so marinate it for a minimum of 4 hours (preferably overnight). Grill over high heat for 3-5 minutes. As for BBQ Short Ribs, grill them over high heat and finish by generously coating them with your preferred sauce. Check out our recipes below for our favorite marinade.

What to Expect
