Q. What types of meat do you offer?

A. We offer a variety of meats, including beef, pork, lamb, poultry, and house-made sausages. We also feature rotating specialty cuts. 

Q. Do you offer custom cuts of meat?

A. Yes, custom cuts are available. Speak with our knowledgeable butchers for special requests.

Q. Are your meats organic?

A. Simple answer: no. We don’t pay the government to give us that label. Our meats come from carefully selected farms that focus on what’s best for the land, the animals, and the consumers.

Q. Do you offer classes or events?

Q. Where does your meat come from?

A. Our beef is from the Wilkes Country area of Western NC: Apple Brandy Beef.  Our pork is from Hickory Nut Gap farms in Fairview NC, and Warren Wilson College in Swannanoa, NC.

Q. How do I place an order for large events or special requests?

Q. What are your policies on sustainability and humane farming?

A. We prioritize sourcing from farms with sustainable practices and humane treatment of animals.  Our beef is one of the most sustainable, regenerative, lowest carbon footprint for a system our size in the country. Our pork is from two very tiny projects here in WNC and their care and sustainability is second to none.

Q. Do you offer shipping or delivery?

A. Shipping and delivery are possible, yes.  But we like to keep our footprint small - and would gladly connect you with a farm closer to you if we are able.
