The Chop Shop Butchery and Apple Brandy Beef are now acting as one entity.
That's right, folks... your food “chain” is now just a “ring.”
We are physically, financially, and emotionally invested in each other. Our beef farm, our transportation, our USDA abattoir, and processing facility, and our retail butcher shop are now one team.
With that, we are in a unique position to supply our community in a very special way.
From the farm to your freezer in five steps:
From the time the calf is born until the time it gets on the trailer to travel 3 miles to our abattoir, at most it will come in contact with ~12 people.
From the time the beef enters the abattoir, everything is inspected and monitored by a USDA employee and at most encounters ~10 staff members.
We only have one driver/delivery person.
At our retail shop your product may, at most, come in contact with seven people, though most likely two or maybe even just one person.
In a world that is focused on “flattening the curve” and limiting interactions, that's a pretty solid starting point!
As there’s often some overlap (sometimes our butchers work the farm, and vice-versa), there are commonly situations where your beef is only in contact with five people from the time it's calved to the time you pick it up from our shop!
Uncertainty During the COVID-19 Pandemic:
This is a tough time. An anxious time. Tensions are high. We are scared and confused and nervous.
We don’t know yet how COVID-19 how will affect us and the people around us. We don’t know about child care with schools being closed. Or about possible unemployment with restaurants and retail shops and many other businesses closing daily.
For us as business owners and parents, and children, and neighbors—we are responsible for much of this. We need to be responsible for our beef that we've been raising. We have to pay our farmers to do it. We have to pay our transporter. We have to pay our butchers. We have to pay our customer service staff and administration. We have to pay our marketing team. We have to continue supplying our community with well-raised meats. And on top of that, we MUST do anything and everything we can to limit the risk of spreading COVID-19.
So we read, listen, share, interpret, believe, dismiss everything that we can based on science.
We believe is that we must keep going. One thing that we can (probably) all agree on, is that right now in this time of uncertainty, that limiting exposure with others is (probably) best.
To us, that means less people and less often. We are making some great changes in order to keep our many stakeholders employed, safe, and fed — from the farmer to you, our guests. All of us deserve this level of respect and care during an uncertain time and it's going to take some effort, patience, and understanding to pull off.
