Smoked Andouille

Who says you need beads to get a taste of New Orleans culture?  Andouille sausage is a New Orleans staple, and ours is as close as you can get to the real deal here in North Carolina. These 1/4 lb links are seasoned with cumin, cayenne, paprika, and ancho chili pepper, along with the addition of milk powder to give them a great texture. The links are then smoked over cherry wood to give the flavor an extra depth that makes them perfect for gumbo. 

This sausage is perfect for any of your cajun cooking. Dice it up and add it to stews, gumbos, étouffée, greens, beans… anything that you want to add a bit of a kick to.

Ingredients

Our sausages are made with carefully selected trim from the entire hog. We only put lean meat and back fat into our sausages, making sure to trim out all the undesirable bits (ahem, unlike some other links out there). We season them, then add ingredients like fresh herbs and dried spices to give it that great texture and flavor. Like all our sausages we use a natural casing to finish off that crisp, hearty bite. Ingredients: Pork, Salt, Cayenne, Onion Powder, Sugar, Thyme, TMC, Allspice, Marjoram, Mace, Clove, Natural Pork Casing
