Smoked Andouille
Who says you need beads to get a taste of New Orleans culture? Andouille sausage is a New Orleans staple, and ours is as close as you can get to the real deal here in North Carolina. These 1/4 lb links are seasoned with cumin, cayenne, paprika, and ancho chili pepper, along with the addition of milk powder to give them a great texture. The links are then smoked over cherry wood to give the flavor an extra depth that makes them perfect for gumbo.
Cooking Notes
This sausage is perfect for any of your cajun cooking. Dice it up and add it to stews, gumbos, étouffée, greens, beans… anything that you want to add a bit of a kick to.
