Warm, hearty, and bursting with flavor, this Classic Beef Stew is the ultimate comfort food. Tender chunks of beef are slow-simmered in a rich, savory broth alongside carrots, potatoes, and peas, creating a perfect balance of textures and tastes. Ingredients:

  • 2 lbs beef stew meat, cut into bite-sized pieces

  • 3 tbsp all-purpose flour (optional, for thickening)

  • 2 tbsp olive oil

  • 1 large onion, diced

  • 3 garlic cloves, minced

  • 4 cups beef stock

  • 1 cup red wine (or substitute with more beef stock)

  • 2 tbsp tomato paste

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 2 bay leaves

  • 4 large carrots, peeled and sliced

  • 4 medium potatoes, peeled and diced

  • 1 cup mushrooms, sliced (optional)

  • 1 cup frozen peas

  • Salt and pepper to taste

Directions:

  1. Brown the beef: Toss the beef in flour, shaking off the excess. Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear the beef in batches until browned on all sides. Remove and set aside.

  2. Sauté aromatics: In the same pot, add the onion and garlic. Cook until softened and fragrant, about 3 minutes.

  3. Deglaze the pot: Pour in the red wine (or extra beef stock) and scrape up any browned bits from the bottom. Let it simmer for 2 minutes.

  4. Build the stew: Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves. Return the beef to the pot, then add the beef stock. Bring to a boil, then reduce the heat to low. Cover and simmer for 1.5 hours.

  5. Add vegetables: Stir in the carrots, potatoes, and mushrooms (if using). Simmer uncovered for another 30 minutes, or until the vegetables are tender.

  6. Finish with peas: Add the frozen peas and cook for another 5 minutes. Remove bay leaves, taste, and adjust seasoning with salt and pepper.

  7. Serve: Ladle the stew into bowls and serve with crusty bread for a complete meal.
